ARENSBAK is crafted by sommelier Emilie Øst-Jacobsen and flavour designer Bram Kerkhof. The purpose was to create a tasteful and complex drinking experience without alcohol building flavors from the ground up and pushing the boundaries of flavours through fermentation. Arensbak has deep roots in Copenhagen that originates from the city’s gastronomic scene and its commitment to culinary innovation, the celebration of local flavours and the New Nordic movement. Bram’s background is at NOMA Fermentation Factory where he specializes in fermentation. He possesses a natural talent for developing new flavour compositions and experiences. The choice of tea, fermentation techniques, ingredients, and preservation are all crucial elements in developing the natural tannins, body, and acidity found in ARENSBAK. As a result, you get the long, round aftertaste and a well-balanced dryness.

Just like grapes, fermented tea can have a complex flavour profile with incredible taste and aromas. And similar to grapes used in traditional wine, tea contains acids and tannins that are naturally present in the tea leaves, which give structure and body. To find the best teas, Emilie and Bram teamed up with one of the leading tea sommeliers in Europe, Alexis Kaae and Pu from VAKKA. Many different teas were tasted before the choice fell on the white Oolong tea, Monkey Picked Tie Guan Yin, for ARENSBAK White and Gong Ting Palace Shu Puerh for ARENSBAK Red. The tea is double fermented and it’s in this second fermentation where whole botanicals and layerd to enhance the complexity.

ARENSBAK Effervescent

ARENSBAK Effervescent is crafted on a base of Wuniuzao Longjing green tea. The tea itself has delicate notes of dried grass and flowers that complement the final ARENSBAK Effervescent greatly.

It’s made on a base of kombucha and to create its elegant taste, gooseberries, peach and a hint of lemon grass are infused in the second fermentation. The scent of lemongrass is especially characteristic to ARENSBAK Effervescent. Before the fine drops are tapped, ARENSBAK Effervescent is layered with oak to enrich its structure and tannins. An absolute crisp non- alcoholic sparkling wine alternative. Peach, gooseberries and lemongrass. Velvety soft, yet still crispy with a round, long aftertaste. Fizzy bubbles.

ARENSBAK RosÉ

ARENSBAK Rosé is created on a base of Wuniuzao Longjing green tea harvested at the foggy hilltops in China’s Zheijang province. The tea itself has delicate notes of flowers and dried grass that add finesse to the final ARENSBAK Rosé.

It’s made on a base of kombucha and in the second fermentation, elderberries, raspberries and hibiscus are added to give ARENSBAK Rosé its floral and sophisticated flavor. A hint of rose pepper adds to the characteristic scent. Before tapped, ARENSBAK Rosé is layered with oak to complement structure and tannins. Fizzy bubbles enhance the tasting experience. A tasty non alcoholic rosé alternative. Floral with fizzy bubbles. Raspberries, elderberries, hibiscus and rose pepper.

ARENSBAK White

ARENSBAK White has a velvety mouthfeel with floral notes and fruity aromas. It is made on a base of kombucha and quince, melon, lemon thyme and marigold flowers are infused in the second fermentation. It is layered with oak to enhance the natural tannins and structure but it also adds a subtle touch of vanilla.

ARENSBAK White is crafted on a base of Oolong tea harvested 900 meters above the ocean in the Fujian province of southeastern China. The tea has a floral and light citrusy taste that gives ARENSBAK White its fresh and elegant flavour. A crisp and delicious non alcoholic white wine alternative. Floral, quince, lemon thyme and melon. Dry with a velvety mouthfeel.

ARENSBAK Red

Crafted on a base of black Shu Puerh tea from the Yunnan region in the Southwestern part of China. The tea itself has a natural earthy flavor that contributes to ARENSBAK Red’s deep and complex taste. It is made on a base of kombucha and in the second fermentation, chokeberries, black currant, sour cherries and mushrooms are added to create umami. And the infusion of juniper berries and licorice contributes to ARENSBAK Red’s deep mouthfeel. Finally, ARENSBAK Red is layered with oak to enhance its natural tannins and structure. The red and black fruits merged with herbal notes makes it a perfect non alcoholic red wine alternative.
